More sweets! I know, I know… there has been a lot of sugar on the blog recently, but this popcorn is worth it. I made it last week to experiment/just for fun as well as for our SuperBowl party – it was a huge hit! First of all, it starts with this revolutionary way to make stovetop popcorn. Aside from all that candy I mentioned yesterday, one of my very favorite snacks is popcorn! I love to buy bags of it lightly dressed with olive oil from Trader Joe’s, but really nothing quite beats fresh, hot stovetop popcorn.

Baked Bree’s method is so simple and uses coconut oil, which leaves the popcorn with an ever so subtly sweet flavor. The trick is to place three kernels and the oil in a large covered pot over the heat. Once those three kernels pop, just remove them from the pot and add the rest of the kernels. Remove from the heat for 30 seconds and then place back on. As long as you tilt the pot from side to side to get things moving around a bit, you will get a perfect batch of hot, crisp popcorn in about 2 minutes…yum!

For the white chocolate coating, I melted about 1 cup of white chocolate chips in the microwave (you can do more or less if you like, but I think this was a good ratio for the 2/3 cup of kernels I popped). Just drizzle over your popcorn and mix thoroughly. Spread it all out on a cookie sheet for about an hour to let the chocolate set. Serve up with some pretty candies mixed in for garnish or for an extra treat!

This is perfect for a Valentine’s date night in with a movie, whether that’s with your significant other or a group of friends! This can seriously be an attractive alternative to a date night out with overcrowded restaurants and pricey prix fixe menus!
