Superfoods seem to be the answer to a lot of problems these days. Anyone else struggle to get enough nutrition into their diet throughout a busy work week? It’s not that I don’t like to cook. I do. I’m just usually too tired and too hungry to have enough patience to do so after a busy day of working at my full time job and then working on The Lilac Press in the evenings (also – I’m definitely more of a baker than a cook). The solution that works for me? Easy meals that are either ready-to-eat or can be thrown together quickly in a pinch, especially superfoods that are packed with nutrients.

The way I see it, I have a few options after a long day of work to stay healthy and happy:

– Order takeout/delivery (usually more expensive than and not as healthy as I would prefer).
– Cook (usually too time consuming for  weeknight).
– Grab something ready-to-eat from the grocery store (my favorite option)!

Wegman’s is about halfway between my office and my apartment, which means you better believe I like to pop in there for the essentials on my way home from work when I can.

First, I’ll head straight for the produce department to pick up a couple of elevĀte Ready Pac salads I can eat for dinner that night and for lunches that week. Wegman’s offers several of the organic, superfood options, so I can switch it up and never get bored. I’ve also had great luck with these salads staying fresh for a few days (all of the yummy and nutritious toppings are packaged separately from the actual greens), so I can stock up for lunches for a few days!

Next, while in the produce section, I like to grab a few of my other favorite superfoods that can be easily munched on throughout the week. I love avocados, tomatoes and fresh berries. Then, I head to the bakery for a fresh loaf of whole grain bread (for avocado toast), and lastly, I head to the health food section for nuts, oats and chia seeds (for overnight oats). All of these ingredients are tried and true for an easy work week for me!

Once I get home after an after-work Wegman’s haul, I’m usually so exhausted and hungry and ready to refuel for a long night of blogging that I eat one of my salads right away! I have to say that when I buy a bag of spinach or salad greens, a lot of it goes to waste before I can eat it all, so these ready made salads allow me to only purchase what I know I will use to avoid food waste.

Once I’m no longer #hangry (and I know I’m not the only one who feels this way after a long day!), I like to pack up lunch for the next day. Another salad goes right into my lunch bag. Then, I’ll wrap up a few of my other recent super food purchases to snack on throughout the day.

Everybody is different, but I know myself and for me personally, I need to eat throughout the day. A typical meal plan for me might look like this:

Breakfast: Overnight oats topped with fresh berries
Mid morning snack: Avocado toast with cherry tomatoes
Lunch: elevĀte Ready Pac salad
Late afternoon: Handful of almonds

Note: a day of eating like this ensures I won’t be #hangry after work, so I can usually wait to get home or make it comfortably out to dinner with friends in the city.

I know it seems silly, but just having something ready to go like these superfood salads really helps me out. I know I can’t be the only one who does not love to cook during the week after a busy day when there is so much on the to-do list.     Ok, first of all, I am SO jealous you have a Wegman’s near you! I never heard of it until my husband who is from Rochester, NY came into my life and now whenever we go to visit, I make it our mission to make that our first stop! Also, these salads look delish and I love the photos you took here!

    This looks delicious! Sometimes when my work week gets too busy I end up reaching for pre-made meals that usually aren’t healthy. BUT this looks delicious! Scoping it out at the store today 🙂
