Sparkling Berry Lemonade

I hate to say it, but our remaining days of summer are numbered. It’s unfortunate but also all the more reason to make the best of the heat while it’s here! With today being National Lemonade Day (another one of those obscure holidays that I secretly love to celebrate), cool off and savor summer with my homemade sparkling berry lemonade recipe!

Ingredients:

  • 1 cup fresh squeezed lemon juice
  • 1 cup sugar
  • 1 cup water
  • 3 cups club soda
  • 1 cup fresh mixed berries

First, bring the sugar and water to a boil in a saucepan over medium heat to make a simple syrup. Once boiling, turn the heat down and simmer until all the sugar has dissolved. Transfer to another container and store in the fridge (4 hours) or freezer (1-2 hours) to chill.

In a large pitcher, combine the simple syrup, lemon juice, club soda and mixed berries. Give the mixture a good stir. This will give the lemonade a pretty pink hue, depending on the berries used. I like to use raspberries for this reason.

And voila! How easy was that?

Optional: the night before you plan to make the lemonade, drop a few berries in an ice cube tray for a frosty and fruity way to keep your beverages chilled longer.

    This lemonade looks delish! Could you use Sprite/7-Up instead of Club soda? I guess that would add to the sweetness, right? Frozen fruit in ice cubes is one of my favorite ways to flavor plain water…so I almost always have some fruit cubes on hand.

      You could definitely use sprite or 7-up instead of club soda! My only concern would that it might be too sweet, so you could use less sugar when you make the simple syrup.
