National S’mores Day

Happy National S’mores Day! It’s a real holiday, I promise. It’s even sponsored by the National Confectioners Association. I knew I would be celebrating this somewhat obscure holiday, but I wanted to take the traditional s’more and switch it up a bit.

I started by dying regular marshmallows with food coloring. For light pink and light green, I just mixed a few drops of red and a few drops of green food coloring with water in two small dishes. Marshmallows will float, so they are a little tricky to keep submerged. I found it was easiest to put several marshmallows in the dish at a time to raise the water level and then to cover it with a plate to keep everything below the top level of marshmallows submerged in the mixture. After about 45 seconds, I took them out and placed them on a wire rack to dry overnight.

The nice thing about s’mores is not only that they are a traditional and well-loved fireside treat, but they can also be made indoors under the broiler. Just place a marshmallow on top of a graham cracker half and place under the broiler for about 30-60 seconds depending on the temperature of your oven.

I’ve been liking chocolate less and less in recent years (crazy I know, especially as a former dark chocolate fanatic), but lately I find myself going for white chocolate, vanilla, and fruity desserts instead. As alternatives to the regular Hershey’s milk chocolate bar, I picked up a Hershey’s white chocolate cookies and cream bar and a Lindt white coconut bar. The result? Delicious! I’ve gotten a lot of positive feedback on the marshmallow and coconut flavor so far. The cookies and cream isn’t too bad either!

These colorful treats can even be made ahead of time and wrapped up after cooling. They’re so easy to whip up that they make a perfect alternative to baked goods for a summer party or a hostess gift.
