Green Juice!

Looking for a healthy and refreshing snack? One of the best ways to incorporate more nutrition into the diet is by blending up a delicious kale smoothie (I did say I’ve been in a bit of a kale craze lately). The vibrant ingredients in this mix feel so clean and nourishing, which make it the perfect way to replenish the body after a particularly hard workout or an extra strenuous hot yoga class. Whipping up a quick batch of this at night makes for a perfect breakfast-on-the-go the next morning. Just store in one of my favorite blender bottles to shake up when you’re ready to drink! The sweet pineapple and banana balance out the bitter kale perfectly. It’s also easy to add extra protein or swap out some of the kale for spinach for a milder flavor. Here’s my recipe:

1 cup kale, shredded
1 banana, sliced
1/2 cup pineapple, chopped (frozen chunks work as well)
1/2 golden delicious apple (you can also add a handful of green grapes for some extra sweetness)
1 cup almond milk
1 tbsp. finely ground chia seeds
Optional: for extra protein, add 1 scoop vanilla whey protein powder

The Nutri Ninja Auto iQ Blender my roommates and I currently have is AMAZING. I had been through several mediocre blenders in the past that just didn’t blend well or the motor had given out after a couple of months. I had all but given up on smoothie-making (short of splurging on a legendary Vitamix), but luckily we were given this Nutri Ninja, and so far it’s perfect!
